Sandwiches—Forget Those Boring Deli Meats and Try Something New

Whether it’s stuffed with deli meats like salami, bologna or pastrami or it’s a classic PBJ, the humble sandwich fits the bill for a hearty lunch or simple dinner, or sometimes, even an on-the-go breakfast.

The definition of what exactly makes a sandwich is open to debate. Some say it’s only a sandwich when it’s lunch meat or other cooked meat enclosed in bread. Others believe in a more expansive definition that includes burritos and wraps. No matter which side you fall on, the sandwich has been a staple part of the human diet almost since time began.

Humans have been eating some form of sandwiches for millenia, but the concept wasn’t called a sandwich until Englishman John Montagu, the 4th Earl of Sandwich, insisted on having his roast beef wrapped in bread so he could eat it with one hand while he was at the gambling table. His fellow gamblers called the dish a sandwich, and the name stuck.

Figgy Pork Sandwich

Juicy pork tenderloin with an easy fig aioli, finished off with slices of cheese and apples and a pile of spicy arugula, all wrapped up in a hoagie roll—it’s like dinner without the knife and fork! The nice thing about this recipe is that you can roast the tenderloin in advance and serve it as a cold sandwich or slice it right out of the oven for a deeply satisfying hot meal.

If you’re a fan of the traditional BLT with its crispy bacon, juicy tomato and crunchy lettuce, this version will knock your socks off! Start with braised Coleman steak cut bacon, add a homemade basil aioli and microgreens, then top it with a slice of heirloom tomato, avocado and the pièce de résistance, a fried egg. But add a little sliced apple and some bacon, and you’ve created a sweet savory masterpiece that will comfort your body and light up your tastebuds!

Pork Cubano Sandwich

This is a great way to use leftover roasted pork loin or tenderloin. A traditional Cubano has ham and Swiss cheese, but this version features Coleman bacon and your favorite pepperjack for a little extra spice. Ideally you would heat this up in a panini press, but if you don’t have one, use two heavy skillets to press the sandwiches.

Kielbasa and Sauerkraut Reuben

We’re going to forego the traditional pastrami deli meat in this one and instead use sliced Coleman kielbasa and smoked Gouda cheese instead of Swiss. The trick here is to make sure the sauerkraut is well-drained so the bread doesn’t get soggy while the sandwich is in the skillet. Add a dill pickle and a helping of potato salad for sides, and lunch is ready.
