INGREDIENTS

  • 4LB Coleman Pork Loin
  • Salt & Pepper to taste
Glaze
  • 1 Cup Apple Cider Vinegar Glaze
  • 6Tbsp Whole Grain Mustard
  • 2Tbsp Olive Oil
  • 4tsp Balsamic Vinegar
  • 1tsp Minced Rosemary, Sage, Thyme each
  • 2tsp Minced Garlic
  • Salt & Pepper to taste
  • 4-6 Sliced Apples

INSTRUCTIONS

  1. Preheat oven to 350 degrees and line a sheet pan with parchment paper. Set aside.
  2. Remove pork from packaging and pat dry with paper towel. Season all sides with salt and pepper.
  3. In a bowl whisk together the apple cider vinegar glaze, mustard, salt, pepper, balsamic vinegar, minced rosemary, sage, thyme and garlic. In a steady stream slowly add the olive oil to emulsify while whisking.
  4. In a large skillet heat 1tbsp oil over medium- high heat. Sear the Coleman pork loin 2-3 minutes on each side to help lock in the moisture.
  5. Move the pork to the lined baking sheet and brush on about half of the glaze and roast for 30 minutes.
  6. While the pork roasts slice up your apples into larger slices. After the 30 minutes remove the pork from the oven and spread the apples all around the pork loin and brush the remaining glaze all over pork and the apples. Bake for an additional 20-30 minutes, or until the internal temperature reaches 150 degrees.
  7. Remove the pan from the oven and allow the pork loin to rest for at least 10 minutes before slicing.
