In a large skillet, fry the Coleman all-natural meats bacon over medium heat until crispy, about 5-6 minutes per batch. Set aside on paper towels to drain. Each burger will have 3-5 slices of bacon.

In a mixing bowl, combine Coleman all-natural ground pork with Spice Tribe seasoning. Form into four equal patties.

In the same skillet, cook the pork patties over medium heat for about 4 minutes per side until fully cooked through (internal temperature of 160°F). During the last minute of cooking, add cheese slices on top to melt.

While the patties cook, lightly toast the St Pierre brioche buns on a grill pan or in the oven until golden.

In a small bowl, whisk together mayonnaise, minced garlic, hot sauce, and lemon juice to create a spicy aioli.
