Instructions

Prep the Sausage. Slice the smoked sausage into thick bite-sized rounds.

Wrap with Bacon. Cut bacon slices in half and wrap each sausage round with bacon to create a small cup shape. Secure with a toothpick.

Fill with Pimento Cheese. Spoon a small amount of pimento cheese into the center of each bacon-wrapped bite.

Season. Lightly season the bites with your favorite BBQ rub.

Smoke or Grill. Place bites on a smoker or grill over indirect heat at 275°F. Cook for 45–60 minutes, or until the bacon is crispy and cooked through.

Glaze. Brush each bite with honey habanero BBQ glaze during the final 10 minutes of cooking.

Finish & Serve. Top with sliced jalapeños if desired and serve warm.
