INGREDIENTS

  • 2 racks Coleman baby back ribs
  • Yellow mustard or binder of choice
  • Your favorite BBQ seasoning or pork rub
  • BBQ sauce or glaze
  • Apple juice or spritz (optional)

INSTRUCTIONS

  1. Prep the Ribs. Remove the membrane from the back of the ribs and pat dry with paper towels.
  2. Season. Lightly coat the ribs with mustard as a binder, then generously season all sides with BBQ rub.
  3. Smoke Low & Slow. Place ribs on a smoker preheated to 250°F bone-side down. Smoke for about 3 hours.
  4. Spritz. Optional: spritz the ribs with apple juice every 45–60 minutes to help keep them moist.
  5. Wrap (Optional). For more tender ribs, wrap tightly in foil or butcher paper after the bark has formed and continue cooking for 1–2 more hours.
  6. Sauce & Finish. Brush ribs with BBQ sauce during the final 20–30 minutes of cooking to let the glaze set.
  7. Rest & Serve. Remove from smoker and let rest for 10–15 minutes before slicing between the bones.
