6 Coleman All Natural Meats pork chops (bone-in, thick-cut)
Salt + pepper
olive oil
Glaze
2 cups of your favorite BBQ sauce
1 cup blueberry jam or jelly
1/4 cup dried onion flakes
INSTRUCTIONS
Let the pork chops sit at room temperature for 20–30 minutes to ensure even cooking. Pat dry and season both sides with salt and pepper.
Heat a heavy skillet over medium-high heat with a drizzle of olive oil.
Sear pork chops for 4 minutes per side, until golden and crusted.
While they sear, mix up the glaze: combine the BBQ sauce, blueberry jelly, and onion flakes in a bowl.
Once seared, spoon glaze over each chop and transfer skillet to a 400°F oven.
Bake for 8–10 minutes, or until the internal temp hits 145°F.
Let rest a few minutes, then glaze again before serving.
