In a large heavy bottom pot, add avocado oil and heat over medium/high heat.

Once oil is hot, add the celery and red onions. Sauté for about 3 minutes or until softened. Then, add the garlic and sauté for about 30 seconds or until fragrant.

Add the Coleman natural all-natural heritage ground pork to the pot, breaking up with a spoon as it cooks, until its fully cooked, about 5 minutes.

Add the red bell pepper, butternut squash, diced tomatoes, tomato sauce and chicken broth, stir together. Bring this mixture to a boil.

Once boiling, reduce heat to medium-low, cover pot with a lid and simmer for 30-40 minutes.

Once butternut squash is tender, your chili is ready to serve. Top with fresh chopped cilantro if desired. Enjoy!
