Butternut Squash Chili

Simmered until tender and well-blended, this butternut squash chili using Colman’s all natural heritage ground pork is the perfect cozy meal for the cooler days of fall. Weather taking this to your weekend football tailgate or serving this for yourself, you are sure to love this tender, sweet and flavorful chili.

Ingredients

  • 2 Tbsp avocado oil
  • 2 stalks celery, diced
  • ½ small red onion, diced
  • 2 cloves garlic, minced
  • 1 LB Colman all-natural heritage ground pork
  • 1-2 tsp red pepper flakes
  • 2 tsp ground cumin
  • 1/2 tsp chili powder
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 small red bell pepper, diced
  • 2 ½ cups butternut squash, cubed
  • 2-15 oz cans diced tomatoes, including juice
  • 1-15 oz tomato sauce
  • 1-2 cups chicken broth
  • Fresh cilantro, for garnish

In a large heavy bottom pot, add avocado oil and heat over medium/high heat.

Once oil is hot, add the celery and red onions. Sauté for about 3 minutes or until softened. Then, add the garlic and sauté for about 30 seconds or until fragrant.

Add the Coleman natural all-natural heritage ground pork to the pot, breaking up with a spoon as it cooks, until its fully cooked, about 5 minutes.

Add the red bell pepper, butternut squash, diced tomatoes, tomato sauce and chicken broth, stir together. Bring this mixture to a boil.

Once boiling, reduce heat to medium-low, cover pot with a lid and simmer for 30-40 minutes.

Once butternut squash is tender, your chili is ready to serve. Top with fresh chopped cilantro if desired. Enjoy!
