INGREDIENTS

  • 16 ounces Coleman Polish Kielbasa Uncured Sausage, fully cooked, sliced ¼-inch thick
  • 2 tablespoons butter
  • 1 cup onion, diced
  • 1 cup celery, chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 3 cups chicken broth
  • 3 cups cauliflower florets, cut into ½” size pieces
  • 1 cup cream
  • 2½ cups sharp Cheddar cheese, shredded, plus more for garnish
  • ¼ teaspoon black pepper plus more to taste
  • Sea salt to taste
  • 1 tablespoon flour, as needed

INSTRUCTIONS

  1. In a large Dutch oven over medium heat, cook onion and celery in butter until tender, about 5 minutes. Add kielbasa and stir occasionally to start to brown on all sides, about 3 to 4 minutes.
  2. Stir in Worcestershire sauce and dry mustard. Cook for 2 minutes more. Add chicken broth and cauliflower.
  3. Bring to a boil. Reduce heat and simmer, covered, for about 10 minutes or until cauliflower is tender.
  4. Stir in cream and allow mixture to simmer again for 2 to 3 minutes. Add cheese and pepper. Cook and stir until cheese is melted.
  5. Taste for seasoning and add a touch of salt if needed. If you want your soup to be slightly thicker, add the flour.
  6. Ladle into soup bowls. Garnish with cheese and pepper, as desired.
