Made some chorizo, and what’s a girl to do but to dump it in the best queso fundido ever!

INGREDIENTS

  • Homemade chorizo (using 1 lb Coleman Ground Pork)
  • 1 1/2 Tbsp avocado oil
  • 1/4 large jalapeño, minced
  • 1/4 onion, minced
  • 1/2 red bell pepper, minced
  • 1 clove garlic, grated
  • 2 cups shredded white cheddar cheese
  • 2 cups shredded jack cheese
  • 2 Tbsp tequila

INSTRUCTIONS

  1. Heat oil to shimmering in a cast iron pan, over medium high heat.
  2. Add onion and peppers. Sauté until just softened. Add garlic.
  3. Stir to combine. Turn heat down to medium low.
  4. Add in cheese, stirring to combine until almost melted. Add tequila.
  5. Continue to sauté until cheese is completely melted.
  6. Serve immediately, stirring in chorizo if you so desire.
  7. Serve with warm corn and/or flour tortillas, chips, and or vegetables of your choosing.
