Ingredients
3½–4 lb Coleman All Natural Meats Pork Butt, cut into large 3–4-inch chunks
Season the pork chunks generously with salt and pepper. Heat the olive oil in a Dutch oven over medium-high heat, then sear the pork on all sides until nicely browned.
2
Add the water or broth, bay leaves, and thyme. Bring it to a gentle simmer, cover, and reduce the heat to low. Braise on the stovetop for about 2½–3½ hours, turning the pork about every 45 minutes, until it's extremely tender and easily pulls apart with a fork.
3
Remove the bay leaves and thyme, then shred the pork and toss it with those braising juices.
4
For the crispy carnitas finish, add the shredded pork to a hot skillet in a thin layer. Let it cook undisturbed for 3–5 minutes so the bottom gets deeply browned and crispy, then toss and serve.
