Description

If brunch had a greatest hits album, this dish would be track one. Panko fried ham and savory waffles is the kind of recipe that looks impressive, tastes indulgent, and—best of all—doesn’t require hours in the kitchen. It’s crispy, it’s golden, and it delivers just the right balance of sweet, salty, and savory. Whether you’re elevating your weekend brunch game or repurposing leftover holiday ham, this combo is guaranteed to steal the show.

Ingredients

For the Waffles

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon garlic salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried tarragon
  • 2 cups buttermilk
  • 3 eggs, separated
  • 2/3 cup light sour cream
  • 1/2 cup vegetable oil

For the Ham

For the optional “Fancy” Syrup (alternately you can use regular maple syrup)

  • 8 tablespoons unsalted butter
  • 8-10 fresh sage leaves
  • ½ cup maple syrup

Instructions

1
For the Waffles
2
In a large bowl, stir together all of the dry ingredients and set aside.
3
In another bowl, mix together the egg yolks, buttermilk, sour cream and vegetable oil until well blended.
4
Pour the wet ingredients into the dry ingredients and stir until batter forms and all ingredients are well incorporated.
5
In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter until just incorporated.
6
Heat the waffle iron, and grease with vegetable oil spray. Use the recommended amount of batter for each waffle according to your iron. Close the lid and cook until golden brown. Waffles can be held in a warm oven while the others are cooking. Serve with air-fryer ham and brown butter and sage syrup; see recipes below.
7
For the Ham & Syrup
8
Slice ham into “sticks” that are approximately 4” long and a ½” by ½” square. If using a spiral-sliced ham, keep layers stacked and cut into stick shape and set aside.
9
In a medium-sized shallow bowl or rimmed plate, crack the eggs into the plate and use a fork to mix eggs together.
10
Place breadcrumbs in another medium-sized shallow bowl or rimmed plate.
11
Dip each ham stick into the egg mixture, then into the breadcrumbs. Set on a baking rack to dry for 15 minutes, allowing the crumbs to adhere firmly to the ham.
12
While ham sticks are drying, make the “fancy” syrup. Place butter in a small saucepan over low heat until melted. Allow butter to continue melting slowly until it starts to turn brown and begins to give off a nutty aroma. Add sage leaves and allow to crisp in the hot butter. Remove pan from heat and add maple syrup. Stir until ingredients are well incorporated and transfer to a warm serving pitcher.
13
Meanwhile, preheat your air fryer to highest setting 5 minutes before you want to air fry your ham sticks. Place sticks into tray and fry for 15 minutes total time, checking every 5 minutes and shaking frying tray to move sticks around for even browning.
14
Place waffles on plates, top with ham sticks and pour warm syrup over the top. Serve immediately.

Tips

If you don’t have an air fryer, you can easily place ham sticks into a 375º F oven for 15-20 minutes, or until golden brown.

From Dinner to Breakfast—Or Brunch

This fried ham recipe isn’t just delicious—it’s smart. Panko fried ham and waffles is the ultimate way to breathe new life into leftover ham. After a big holiday dinner, when you’re staring down a spiral ham in the fridge, this savory waffle dish offers a creative (and crowd-pleasing) solution.

But leftovers aren’t the only reason to make it. It also shines as the centerpiece of a special weekend breakfast or a laid-back brunch. Pair it with eggs, fruit, or even a drizzle of maple syrup if you like that sweet-and-savory balance. However you plate it, it’s a dish that brings comfort and celebration to the table.

How to Make Panko Fried Perfection: Crispy Meets Fluffy

There are two main elements in this dish: the fried ham and the savory waffles. Each brings its own texture and flavor—and when they come together, the result is magic.

Start with thick slices of Coleman ham, patted dry and coated in a seasoned flour and egg wash. Then, press them into a bed of panko breadcrumbs until they’re fully covered. This coating is what gives them that irresistible crunch.

Pop the breaded ham slices into your air fryer and let them crisp up to golden perfection while you make the waffles. These aren’t your average waffles—they’re savory, cheddar-infused waffles with a hint of fresh chives, made from a batter that’s light yet rich. The cheese melts into the waffle pockets, and the herbs give a punch of flavor that balances the salty ham beautifully.

Serve Up Something Savory and Delicious

Once everything’s ready, serve the panko fried ham on top of the waffles and garnish with more chives, extra cheese, or even a runny egg if you’re feeling extra.  You’ll have a brunch plate that looks restaurant-level but comes together with minimal stress.

Want to take things to the next level? Try the fancy sage butter syrup from the original recipe. Made by melting butter with fresh sage leaves before stirring in maple syrup, this aromatic drizzle adds depth and a gourmet twist to every bite. It’s rich, slightly herbaceous, and ties the whole dish together—perfect for impressing brunch guests or simply treating yourself.

A Decadent Favorite That’s Surprisingly Easy

What makes this recipe even better? It’s made in the air fryer, which means less mess and more consistent results. Panko breadcrumbs crisp up beautifully in the air fryer’s circulating heat, making it the ideal way to get that golden, crunchy exterior without deep frying.

It also cuts down on cooking time, so you can go from prep to plate in under 30 minutes. That’s brunch-worthy efficiency.

No Air Fryer? No Problem

If you don’t have an air fryer, don’t worry—you can still make this dish just as delicious. Heat a thin layer of oil in a nonstick skillet over medium-high heat. Fry the breaded ham slices for 2–3 minutes per side, or until golden and crisp. Drain on a paper towel to keep the coating light and crunchy.

The waffles, of course, work the same way regardless of your kitchen gear. Just make sure your waffle iron is preheated and lightly greased before pouring in the batter.

Why Coleman Ham Makes the Difference

No matter how you cook it, this dish starts with high-quality ham—and Coleman has exactly what you need. And beyond flavor, Coleman stands for something bigger. Their pork products come from American family farms that raise animals without antibiotics or growth hormones, ever. Coleman pigs are crate-free, American Humane Certified, and never given animal by-products. That means when you serve up panko fried ham and waffles, you’re not just treating yourself—you’re supporting better farming practices and animal welfare standards.
