INGREDIENTS

For the Waffles
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon garlic salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried tarragon
  • 2 cups buttermilk
  • 3 eggs, separated
  • 2/3 cup light sour cream
  • 1/2 cup vegetable oil
For the Ham
For the optional “Fancy” Syrup (alternately you can use regular maple syrup)
  • 8 tablespoons unsalted butter
  • 8-10 fresh sage leaves
  • ½ cup maple syrup

INSTRUCTIONS

  1. For the Waffles
  2. In a large bowl, stir together all of the dry ingredients and set aside.
  3. In another bowl, mix together the egg yolks, buttermilk, sour cream and vegetable oil until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir until batter forms and all ingredients are well incorporated.
  5. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter until just incorporated.
  6. Heat the waffle iron, and grease with vegetable oil spray. Use the recommended amount of batter for each waffle according to your iron. Close the lid and cook until golden brown. Waffles can be held in a warm oven while the others are cooking. Serve with air-fryer ham and brown butter and sage syrup; see recipes below.
  7. For the Ham & Syrup
  8. Slice ham into “sticks” that are approximately 4” long and a ½” by ½” square. If using a spiral-sliced ham, keep layers stacked and cut into stick shape and set aside.
  9. In a medium-sized shallow bowl or rimmed plate, crack the eggs into the plate and use a fork to mix eggs together.
  10. Place breadcrumbs in another medium-sized shallow bowl or rimmed plate.
  11. Dip each ham stick into the egg mixture, then into the breadcrumbs. Set on a baking rack to dry for 15 minutes, allowing the crumbs to adhere firmly to the ham.
  12. While ham sticks are drying, make the “fancy” syrup. Place butter in a small saucepan over low heat until melted. Allow butter to continue melting slowly until it starts to turn brown and begins to give off a nutty aroma. Add sage leaves and allow to crisp in the hot butter. Remove pan from heat and add maple syrup. Stir until ingredients are well incorporated and transfer to a warm serving pitcher.
  13. Meanwhile, preheat your air fryer to highest setting 5 minutes before you want to air fry your ham sticks. Place sticks into tray and fry for 15 minutes total time, checking every 5 minutes and shaking frying tray to move sticks around for even browning.
  14. Place waffles on plates, top with ham sticks and pour warm syrup over the top. Serve immediately.
