In a large mixing bowl, combine the ground pork, diced onion, minced garlic, Knotty Rub, and Panko bread crumbs. Use your hands or a spoon to gently mix until thoroughly combined.
Divide the mixture into 6–8 equal portions and form into patties, about ¾ inch thick.
Set your pellet grill to high heat (450–500°F). Let it preheat fully before placing any of the burgers on the grill.
Place patties directly on the grill grates. Grill for about 4–5 minutes per side, flipping once, until internal temperature reaches 160°F. Make sure you get a nice sear on both sides of the burgers
Rest burgers briefly, then serve on toasted buns with your choice of toppings and sauces.
