Ingredients

  • 1 lb Coleman ground pork
  • 2 (15-oz) cans cannellini beans, drained & rinsed
  • 2½–3 cups chicken stock
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, finely chopped (seeded for less heat)
  • 2 tbsp olive oil
  • 1½ tbsp ground cumin
  • 1½ tbsp chili powder
  • Salt & freshly cracked black pepper, to taste

Heat olive oil in a large pot over medium heat. Add ground pork and cook until browned, breaking it up as it cooks.

Add onion, garlic, and jalapeño. Sauté until softened and fragrant, about 3–4 minutes.

Mash or blend 1 can of cannellini beans until mostly smooth, then stir it into the ground pork mixture to naturally thicken the chili.

Season with cumin, chili powder, salt, and pepper. Stir to coat evenly.

Pour in 2½ cups chicken stock and mix well. Bring to a gentle simmer.

Add remaining can of beans and simmer for 10–15 minutes, adding up to ½ cup more stock if needed, until thick and cozy.

Taste and adjust seasoning as needed. Let rest for 15 minutes off heat before serving. Enjoy this cozy bowl of comfort!
