Heat a skillet to medium and add ground pork, onion, tomatoes, and garlic. Break up the ground pork and cook stirring occasionally until it starts to brown, about 7-8 minutes

Once the pork is about done, add Italian seasoning, salt, tomato paste and cooked rice to the skillet. Stir to combine and then turn off the heat.

Add in shredded cheese and let it melt in.

Scoop the filling mixture evenly into the prepped bell peppers, and place them in a baking dish.

Place baking dish in oven and cook for about 15 minutes, until the bell peppers soften. Once done, remove and garnish with chopped parsley. Enjoy!
