INGREDIENTS
12 oz Coleman sausage of your choosing
1 large head of broccoli
2 large bell peppers
1 cup of chopped pineapple
2 cups of chopped potatoes
1/2 red onion
Olive oil
Paprika
Garlic powder
Salt & pepper to taste
Parmesan cheese for topping
INSTRUCTIONS
Preheat oven to 400 and line a baking sheet with parchment paper
Wash and prep all your veggies into 1 inch pieces and sausages into 1/2 inch medallions
Layer everything evenly onto your baking sheet and drizzle with olive oil (about 5-6 tbsp)
Season everything evenly and toss until everything is covered
Bake for 15 minutes, take out to toss again, and pop it back in for another 15 minutes
Top with shredded parmesan and ENJOY!
