Ingredients

Pasta Salad

  • 1 pound pasta (rotini, cavatappi, or mini shells)
  • 2 Coleman ham steaks
  • 8 ounces Swiss cheese, cut into small cubes
  • 1 cup peas, blanched and cooled
  • ½ cup finely diced pickles (optional)
  • 1 bunch scallions, thinly sliced
  • 1 bunch scallions, thinly sliced
  • 1 tbsp fresh dill, chopped

Honey Dijon Vinaigrette

  • ½ cup olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • Freshly ground black pepper, to taste

Instructions

In a blender, small food processor, or mason jar, combine the olive oil, Dijon mustard, honey, lemon juice, pickle brine, kosher salt, garlic powder, and black pepper.

Blend or shake until smooth and emulsified. Set aside.

Bring a large pot of salted water to a boil.

Cook the pasta according to package directions until al dente.

Drain and rinse under cold water until completely cooled.

Heat a skillet over medium heat.

Add the ham steaks and cook for 3–4 minutes per side, or until lightly browned and caramelized around the edges.

In a large mixing bowl, combine the cooled pasta, cubed ham, Swiss cheese, peas, pickles, scallions, parsley, and dill.
