Korean Pork Quesadillas

INGREDIENTS
1/3 cup soy sauce
1/4 cup brown sugar
4 cloves of finely chopped garlic
1 1/2 tablespoons grated fresh ginger
1 1/2 tablespoons toasted sesame seeds
1/2 teaspoon chili paste
1 pound Coleman ground pork
Avocado oil or light olive oil
6 large flour tortillas
3 cups shredded mozzarella cheese
7 scallions chopped
INSTRUCTIONS
Add soy sauce, brown sugar, garlic, ginger, sesame seeds, & chili paste in a bowl and whisk all together.
In a skillet over medium heat, add ground pork and cook until browned. Then add your soy sauce mixture and mix into the pork.
Heat a separate skillet over medium heat and lightly oil it.
Place one tortilla in the skillet spoon some pork mixture on top, sprinkle cheese over half and scallions then fold the tortilla over.
Cook 2-3 minutes on each side until golden brown and cheese is melted.
