These aren’t your average nachos! Featuring savory, chopped Coleman rope sausage mixed with a vibrant blend of black beans, corn, and diced fresh tomatoes, all piled high on a mountain of tortilla chips. Drenched in creamy queso and baked with an extra layer of shredded cheese, a few slices of fresh jalapeño add the perfect kick to this ultimate snack or easy weeknight meal.

Ingredients

  • 1 package Coleman rope sausage, chopped
  • 1 bag tortilla chips
  • 1 cup queso cheese
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1–2 fresh tomatoes, diced
  • 1–2 jalapeños, sliced

Preheat Oven – Heat oven to 350°F.

Layer the Chips – Spread tortilla chips evenly on a large baking sheet or oven-safe dish.

Add Toppings – Scatter chopped Coleman Natural link sausage over the chips. Then layer on the black beans, corn, diced tomatoes, and jalapeños.

Load with Cheese – Drizzle queso cheese across the top, then sprinkle on shredded cheese.

Bake – Bake or throw on smoker for 20–30 minutes, until the cheese is melted and bubbly.

Serve & Enjoy – Remove from oven, let cool slightly, and serve hot. Add sour cream, salsa, or guacamole if you like.
