Ingredients

  • 1 pound Coleman All Natural Meats Ground Beef
  • 1 onion, grated
  • 2 small carrots, grated
  • 2 eggs
  • ¼ cup grated Parmesan cheese
  • ¼ cup tomato ketchup or tomato sauce
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • Black pepper, to taste

For the Mashed Potato Topping

  • 2 large or 3 medium potatoes
  • 1 tablespoon butter (optional)
  • ½–1 cup milk, warmed

For Garnish (Optional)

  • Tomato ketchup or sauce
  • Finely chopped parsley

Preheat oven: Preheat oven to 350°F.

Prep muffin tin: Spray 8 holes of a muffin tin with non-stick spray or grease lightly.

Mix meatloaf: Grate the onion and carrot straight into a large bowl. Add the ground beef, eggs, Parmesan, ketchup, panko, garlic powder, oregano, thyme, salt, and pepper. Use your hands to mix and combine well.

Fill cups: Scoop about ½ cup of the meat mixture and form into a rough ball. Press into the prepared muffin tin so the surface is slightly domed. Repeat with remaining mixture (should make about 8).

Bake: Bake for 20–25 minutes until the tops are browned. Remove from the oven.

Make mashed potato: While meatloaf cupcakes are baking, peel and dice the potatoes. Steam or boil until soft. Drain, then add butter and about ½ cup milk. Mash with a potato masher until smooth and creamy but stiff enough to hold its shape when piped or dolloped. Add extra milk if needed.

Assemble: Smear a little ketchup on top of each cooked meatloaf cupcake. Top with mashed potato using a spoon or piping bag for a decorative look.

Serve: Sprinkle with chopped parsley if using and serve immediately.
