INGREDIENTS

  • 1 pound Coleman Mild Sweet Italian Pork Sausage
  • 1 15-ounce tub whole-milk ricotta
  • 2 cups mozzarella, shredded, divided
  • 2 tablespoons butter
  • 1 cup red onions, diced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 26-ounce jar your favorite store-bought marinara sauce or homemade
  • I package no-boil lasagna noodles
  • ½ cup Parmesan, shredded
  • ¼ cup fresh basil leaves, thinly sliced, for garnish

INSTRUCTIONS

  1. Heat oven to 425° F. In medium bowl, mix ricotta and 1 cup mozzarella. Set aside.
  2. In large heavy bottomed skillet over medium heat, add butter and onion, cook until onion softens and becomes translucent, about 5 minutes. Add sausage, and cook, stirring frequently, until cooked through. Add salt and pepper and stir until combined.
  3. In lasagna pan, spread thin layer of marinara sauce on the bottom, cover with lasagna noodles. Top noodles with ricotta-mozzarella. Sprinkle sausage mixture over cheese. Add another layer of noodles, then fully cover noodles with remaining sauce. Top lasagna with remaining mozzarella and the Parmesan.
  4. Cover lasagna with aluminum foil and bake 15 minutes. Remove cover. Bake 30 minutes longer or until pasta is tender and mixture is browned on edges. Top with basil and serve.
