INGREDIENTS

  • 8 oz. Coleman Uncured Ham Steak, chopped into 1/2 inch pieces (or leftover sliced ham)
  • 2 cups water
  • 1 cup orzo
  • 1/2 green onion
  • 1 cup tomatoes
  • 1 cup fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice

INSTRUCTIONS

  2. Cook orzo according to package directions and rinse with cold water.
  3. While the orzo is cooking, chop the green onions, tomatoes and parsley.
  4. Place 1/2-inch pieces of ham in a heavy skillet over medium-high heat, stirring occasionally, to brown slightly on all sides. Set aside and allow to cool.
  5. In a large bowl combine all the ingredients. Cover and chill in refrigerator for approximately one hour. Stir and serve it cold.
