Description

This creamy Pork Stroganoff takes everything you love about the classic and reimagines it with rich, tender Coleman Pork Tenderloin. Ingredients

  • 1 Coleman pork tenderloin
  • 1 onion diced
  • 2 cups mushrooms sliced
  • 3 gloves garlic minced
  • 2 tbsp Dijon mustard
  • 2 tbsp paprika
  • 1 cup of chicken stock
  • 1 cup of sour cream
  • 1 package egg noodles
  • Salt & pepper to taste

Instructions

Prepare the pork tenderloin by slicing into thin, bite-sized strips, perfect for quick cooking.

Drizzle extra virgin olive oil over the pork strips, then sprinkle with salt and freshly cracked pepper. Make sure each piece is well-coated for maximum flavor!

Heat a cast iron skillet over medium-high heat. Once hot, add the seasoned pork strips in a single layer. Sear them until they’re golden brown and delicious, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.

In the same skillet, pour in a splash of chicken stock to deglaze the pan, scraping up any tasty bits left behind. Add sliced mushrooms and sauté until they’re browned and tender. Then, toss in chopped onions and minced garlic, cooking until fragrant and the onions are translucent.

Stir in a spoonful of Dijon mustard and a sprinkle of paprika to the veggies. Pour in a bit more chicken stock to bring everything together and create a rich sauce.

Return the seared pork to the skillet, mixing it into the sauce. Let it simmer for a minute to blend the flavors.

Stir in a generous dollop of sour cream, creating a creamy, dreamy sauce that clings to the pork.

Cook your egg noodles according to package instructions. Once ready, plate the noodles and generously top them with the creamy pork and mushroom sauce.
