Description

A comforting and flavorful dish featuring jumbo pasta shells stuffed with a savory pork and cheese filling, baked in a rich marinara sauce, and topped with melted mozzarella. Perfect for a cozy family dinner.

Ingredients

  • 20 jumbo pasta shells
  • 1 lb Coleman All Natural Meats ground pork
  • 1/2 cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/2 cup Parmesan cheese, grated
  • 1 cup shredded mozzarella cheese (divided)
  • 1 large egg
  • 2 cups marinara sauce
  • fresh basic, chopped (for garnish)

Instructions

Preheat the oven to 375°F (190°C).

Cook jumbo pasta shells in a large pot of salted boiling water until al dente (1-2 minutes less than the package instructions.) Drain and set aside.

In a large skillet, heat a small amount of oil over medium heat. Add diced onion and cook until softened, about 2-3 minutes.

Add minced garlic and cook for an additional 30 seconds until fragrant.

Add Coleman ground pork to the skillet. Cook until browned, breaking it up as it cooks. Drain excess liquid.

Stir in Italian seasoning, red pepper flakes, salt, and black pepper. Remove from heat and let cool slightly.

In a mixing bowl, combine ricotta cheese, Parmesan cheese, 1/2 c up mozzarella cheese, and the egg.

Add the slightly cooled pork mixture to the cheese mixture and stir until well combined.

Spread 1/2 cup of marinara sauce in the bottom of a 9x13 baking dish.

Stuff each cooked pasta shell with the pork and cheese filling, then arrange them in the baking dish.

Pour the remaining marinara sauce of the stuffed shells and sprinkle with the remaining 1/2 c up of mozzarella cheese.

Cover with aluminum foil and bake for 25 minutes.

Remove foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Garnish with fresh basil before serving.

Serve warm with garlic bread or a side salad.
