Sausage and Cheese Egg Boats

INGREDIENTS

  • 1 large Italian bread loaf
  • 5 eggs
  • 1/2 c. heavy cream
  • 1/2 c. scallions, diced
  • 1 lb Coleman Breakfast Sausage (mild or hot)
  • 1 1/2  c. gruyere cheese (or Swiss), divided 
  • Salt and pepper, to taste
  • 4 tbsp unsalted butter, melted
  • 2 tsp garlic powder
  • 2 tsp parsley
  • 1/2 tsp paprika

INSTRUCTIONS

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. Cut out a large rectangular well in the middle of the bread loaf.  Making sure not to go all the way through the bread (leave about 1/2” along all sides and the bottom).
  3. Whisk together eggs and heavy cream in a large bowl.  Add in scallions, cooked sausage, 1 c. Of the cheese, salt and pepper. Mix together and set aside.
  4. In a small bowl, mix together the melted butter, garlic, parsley, and paprika.  Use a brush to coat the inside and top of the bread.  
  5. Sprinkle about 1/4 c. Cheese on the bottom of the bread.  Spoon in the egg mix and then sprinkle more cheese on top.
  6. Bake for about 45-50 minutes, or until egg has puffed up and center is mostly dry. (Put a piece of toil on top if it seems to be browning too much).
  7. Allow to cool at least 5 minutes and then cut and enjoy!
