INGREDIENTS

  • 1 pound Coleman Chorizo Ground Pork Sausage
  • 4 large eggs, whisked
  • 1 cup whole milk
  • 1 teaspoon ground cumin
  • 2 ounces aged Cotija, crumbled or grated
  • 2 tablespoons cilantro, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • Pepper, freshly ground
  • 2 tablespoons butter
  • 4 thick slices rustic bread
  • Hot honey, for topping (optional)

INSTRUCTIONS

  1. Add eggs, milk, ground cumin, Cotija, cilantro, garlic, sea salt, and a few grinds of pepper to a mixing bowl. Whisk vigorously.
  2. Place a large sauté pan over medium heat, add butter. When melted, spread it around. Keep pan on heat.
  3. Place one slice bread in egg mixture, press it down. Flip bread slice over and let it soak as much or as little as you like. Transfer slice to sauté pan. Repeat with each slice. Cook bread slices until golden brown, flip and cook other side.
  4. To serve, place 1 French toast slice on a plate, add cooked chorizo on top then top with another French toast slice.
  5. Drizzle with hot honey, if desired, and serve immediately.
