In a small saucepan over medium heat, mix together soy sauce, honey, garlic, ginger, hoisin, rice vinegar, tahini, and red pepper flakes. Bring to a slight boil and then reduce heat to simmer. Stir occasionally and reduce until thickened (about 10 minutes).

Preheat oven to 425F and line a large baking sheet with parchment paper.

Add chopped vegetables to the baking sheet and drizzle with olive oil. Toss to coat vegetables in oil.

Make room in the center of the baking sheet and add the pork tenderloin.

Coat tenderloin with some of the sticky sauce (reserve a little to have with the cooked dish).

Bake for 20-22 minutes, or until temperature of pork is at least 145F and vegetables are soft.
