Thick steak cut bacon, smoky pork burgers, and melty cheese come together in a no nonsense, flavor packed burger. Finished with BBQ sauce and mayo, it’s a simple, satisfying bite built for repeat grilling.
Preheat the oven to 400F (205C). Line a rimmed baking sheet with foil or parchment. Arrange the bacon in a single layer.
2
Bake for 18-20 minutes, or until edges are crisp and centers are slightly chewy. Transfer to paper towels to drain. Set Aside.
3
In a mixing bowl, combine ground pork, garlic powder, smoked paprika, salt, and pepper. Mix until just combined and form into 4 patties. Chill for 10-15 minutes.
4
Heat a skillet or grill over medium-high. Cook the patties for 4-5 minutes per side, or until they reach 160F. In the final minute, brush with BBQ sauce and top with cheese, if using, to melt.
5
Butter the cut sides of the buns and toast in a pan or on the grill until golden brown.
6
Spread mayonnaise on the bottom bun. Add the pork patty (with cheese, if using), followed by two slices of bacon. Spread BBQ sauce on the top bun, then add the top bun to complete the burger.
